Breakfast for dinner




 Last nights dinner was one of our favorites. It’s usually my go to if I’ve forgotten to pull meat out of the freezer or if we’re just out completely because I need to get groceries. 

Omelettes are a family favorite and an easy solution to the ever pressing quandary or “what to make for dinner”. 

We made them together last night which was fun. My oldest daughter who is 2 1/2 often helps me but my husband is seldom found in the kitchen unless he’s making a protein shake or poring a bowl of cereal. 

I made some fried potatoes or home fries as they are sometimes called.  I diced an onion and four golden potatoes. Growing up my mom always used russet potatoes which are good but take forever to cook. I discovered golden potatoes after I got married Amd now they are a common staple in my kitchen they cook much much faster then russet potatoes Amd have a wonderful soft texture!  I sautéed the onion in some vegetable oil Amd then threw in the diced potatoes and just let them cook on medium high while making the omelettes, stirring occasionally to keep them from burning but not too often so they would crisp up! Yum! 



Then we made the omelets  

I chopped up some deli ham and got out half a bag of frozen peppers and onions. After those thawed and cooked I addd the ham to warm it up. Then I set that aside. My daughter helped whisk the eggs with salt pepper and a little heavy whipping cream. I did one egg for my daughter, two eggs for me Amd four for my husband. I poured the whisked eggs with the cream into the already warmed and greased pan from the veggies Amd let it cook for a minute until it starts to get firm then I add the veggies Amd ham Amd some cheddar chees. I fold the onnele in half Amd let it cook for a little longer then put it on s plate! I do that same process for each onnelettd. The four egg one taking longer to cook than the others. Then I plate it all up and serve. Yummy dinner. Everyone enjoyed it! I also added some cheese to the potatoes after I put them on each of our plates.
